Like many outstanding chef we know, Chef Damiano embraced his passion and destiny for professional cooking at a young age; at the age of 15, he embarked on his gastronomic voyage by working alongside with masters such as Gualtiero Marchesi, Marco Pierre White, Alain Ducasse Alain Soliveres and Enrico Crippa whose precision, devotion and commitment to the art of cooking have all left their mark on him. In 2006, Chef Damiano was being put in charge as the executive chef of the 4 star Relais “Villa d’Amelia” in the stunning Piedmont region in Northern Italy where he still works now; under his stewardship, the Villa d’Amelia restaurant earned the coveted 1 Michelin star.
While the influences from the celebrated restaurants and chef that Chef Damiano has worked with can be beautifully found in his cooking, but it is his bold and original mix of the Piedmontese culinary tradition with the elegant and plain flavors of his hometown in Brindisi, in the south of Italy, that impresses and surprises the diners and the critics; it is his daring and unyielding pursuit to find the balance between traditional and modern culinary flavors that we are delighted to present Beijing with at TRB Forbidden City.
